In 2005 Romain Bouchard took over Domaine de la Grande Chaume, a Domaine of of 3.38 hectares of vines located in two beautiful areas. From the start, Romain introduced a rigorous viticulture with respect to Mother Nature in order to obtain an optimum quality of
grapes. Much work is carried out in the vines to get the best out of each parcel (dis-budding, crop thinning). No chemical products are applied in the vines and only natural products (copper and sulphur) and plant extracts are used. Yields are controlled and grapes are picked by hand and carefully pre-selected before pressing. The vinification and maturation (twelve months minimum) take place in ideal conditions at the family’s winery of Pascal Bouchard in Chablis. Domaine de la Grande Chaume has been in organic conversion since 2007 (Ecocert). The first AB certified vintage is 2010.
