CHABLIS PREMIER CRU VAU DE VEY
This is the main wine of the domaine produced from a single vineyard of 2,77 hectares planted in 1979. Vau de Vey is a steep slope with a perfect East/South-East exposition. Yields are low. Matured in oak and steel tank, this is a real "terroir" wine with a great mineral tension and a good aging potential.

Yield : between 30 hl/ha and 45 hl/ha
Pressing: Whole bunches in pneumatic press, transfer by gravity
Settling of must: 18 hours
Vinification et Maturation: 100% indigenous, natural yeast,
fermentation in stainless steel (70%) at 19-20°C and 30% in
French oak (underground storage). Maturation on fine lees with
pumping over and occasional stirring during 11 months.
Bottling: After 12 months
Bottle closure: Natural cork, vintage indicated on cork
